I'm not aware of any - I imagine that there must be some, somewhere, since there is so much fiction in the world, but I haven't found them. I'm not even aware of many Sephardi characters in fiction (not that I am exactly an expert) - the only one who comes to mind is a minor character in Jonathan Kellerman's mystery novel Blood Test, the principled attorney Ezra Maimon.
The film and TV actor Hank Azaria is Sephardi, but I'm not aware of his having played any Sephardi characters (though he has played both Ashkenazi characters and non-Jewish Hispanic characters).
